Frequently Asked Questions About a Gluten-Free Diet

What is gluten?

Gluten is considered a sticky protein found in the grain of various cereals. In foods, gluten keeps the dough together, makes it elastic, and helps it rise well.

Which grains contain gluten?

Gluten is found, among other things, in the following types of grains:

  • Wheat

  • Spelt

  • Barley

  • Rye

  • Emmer

  • Green kernel

People who follow a gluten-free diet therefore avoid these cereals as well as products made from them. Even foods you wouldn't suspect can contain gluten. Examples would be vegetable broth or stir-fried dishes seasoned with soy sauce.

Which foods are gluten-free?

Naturally gluten-free are mainly:

  • Fruits and vegetables

  • Potatoes

  • Unprocessed meat / fish

  • Eggs

  • Dairy products

  • Certain grains / pseudo-grains like: corn, rice, buckwheat, quinoa, millet, or amaranth

In addition, there are some processed products that are specifically labeled gluten-free and serve as alternatives to products that are normally made with gluten. These include, for example, pasta or bread.

Is oats gluten-free?

Oats are naturally gluten-free. However, contamination can occur when they are harvested with the same machines or processed in the same mill as gluten-containing grains. As a result, the gluten content often exceeds the safe limit of 20 ppm. This also applies to other products that are actually made from gluten-free grains. For people with celiac disease, it's especially important to look for products that are certified gluten-free. At Alnavit, we use certified gluten-free oats and other gluten-free grain products for safe enjoyment.

How can I tell if a product is gluten-free?

The ingredient list gives the first clues. All major allergens, including gluten, must be highlighted in bold. Products that are really gluten-free have the label "Gluten-Free" or the gluten-free seal.

What does the trace warning 'May contain traces of gluten' mean?

The trace note is a voluntary statement from the manufacturer. It means that the product itself does not contain any gluten ingredients, but an unintentional contamination with traces cannot be ruled out. That's why you won't find this note on reliably gluten-free products.

What is celiac disease?

Celiac disease is an autoimmune condition where the body mistakenly considers gluten to be dangerous and, as a result, produces autoantibodies. This leads to inflammation in the intestinal lining. The only treatment for celiac disease is to follow a gluten-free diet for life. If you've been diagnosed with celiac disease by a doctor, you'll find more information on the website of the German Celiac Society.

What's the difference between celiac disease and gluten sensitivity?

Similar complaints can occur with both. However, with gluten sensitivity, the body does not react with a misguided immune response in the form of autoantibodies – unlike with celiac disease. In addition, people with gluten sensitivity usually don't have to strictly follow a gluten-free diet like those with celiac disease do. Instead, it's about finding the amount of gluten that you can tolerate individually.

Are Alnavit products suitable for celiac disease?

Yes, Alnavit products are regularly tested, carry the Europe-wide symbol of the crossed grain, and are suitable for people with celiac disease.
